Armadillo Eggs
Smokey bacon wrapped goodness with a kick!

| Jalepenos | 8 peppers |
| Ground Beef | 2 lbs |
| Ground Sausage | 1 lbs |
| Finely Shredded Cheddar Cheese | 1/2 cup |
| Finely Shredded Mozzarella Cheese | 1/2 cup |
| Ricotta Cheese | 1/2 cup |
| Onion Powder | 1 Tbsp |
| Garlic Powder | 1 Tbsp |
| Chipotle Tabasco | 3 oz |
| Paprika | 2 tsp |
| Bacon | 2 lbs |
| BBQ Sauce | 2 cups |
- Prepare smoker at 250 degrees with your choice of wood pellets or chips
- Remove the tops of the Jalepenos and remove seeds
- In a large bowl, mix the Ground Beef and Ground Sausage
- Mix spices and Tabasco into meat mixture
- In a seperate bowl mix Cheddar, Mozzarella, and Ricotta Cheese
- Fill Jalepenos with Cheese Mixture
- Cover stuffed Jalepenos with meat mixture
- Wrap Jalepenos with Bacon
- Place Eggs in smoker
- Cook until internal temperature reaches 165 degrees. Remove Eggs
- Increase smoker temperature to 400 degrees
- Brush Eggs with BBQ Sauce
- Return Eggs to smoker for 5 minutes
- Remove Eggs from smoker and serve
